Cookies Kitchen had the pleasure of being invited to join the Kent Show 2023. Amongst all the great Kent grown fruit, like apples, pears and plums are cherries.

Yes – that’s right – cherries!

A summer must have

UK cherries are in season from June-August making them perfect for your summer picnics.

So many cherries

There are over 1200 varieties of cherries grown around the world some sweet and some sour. We grow around 20 varieties here in the UK.

Packed with goodness

Rich in flavour and a great source of fibre, potassium and vitamin C, they are packed with antioxidants too. All essential in our everyday diet.

The cherry tree

A typical cherry tree produces 7000 cherries, don’t eat them all at once! A tree can live for and produce fruit for up to 100 years.

Cherry Flapjack Recipe

Make 16 squares

Ingredients:

200g butter

100g golden syrup

50g light brown sugar

300g oats

2 carrots, grated

Zest 1 orange

100g dried cherries, roughly chopped

8 glace cherries, halved (optional)

Method:

First pre-heat the oven to 160ºC, 140oC, gas mark 3. Line a 6” square baking tin with greaseproof paper.

Melt the butter and syrup in a saucepan.

Mix the oats, sugar, carrots, zest and apricots together in a large bowl. Pour the melted butter into the mixture and stir well.

Pour the mixture into the baking tin and press down firmly.

If using, place the glace cherries evenly across the mixture and lightly press in, you will want one on every square when you cut it!

Bake for 40-45 minutes, allow to cool before slicing into 16 squares.

Cherry jam is delicious and so easy to make as cherries have enough natural pectin in them so your just need cherries and sugar.
